Jamaica: known for it’s Botanical Gardens, a weird bird called “Doctor Bird” and Bob Marley of course!
Bob, the man that put Jamaica on the world map and probably smoked half of the Botanical Gardens himself would probably have enjoyed a good plate of Nachos after Jammin with his pals :-).
So many delicious Jamaican recipes, I decided to make Nachos with Jamaican Style chicken, perfect if you have friends over because you can make the salsa, sour cream and cut up the veggies in advance!
And always remember my culinary friends – Get up, stand up, Stand up for your Recipes!!
Here we go:
Salsa: chop up some cherry tomatoes (I prefer them without the seeds) , add some lemon juice, saucolive oil, sweet chili sauce and season to taste.
Sour Cream Dip: Mix some Sour Cream together with finely chopped cucumber, some rock salt and course pepper.
I marinated the chicken thighs into Jamaican Jerk rub, which I made myself following this recipe:
Of course I didn’t use the exact measurements, just mixed to my taste ( not too spicy, sorry Jamaica!)
For the chicken, use chicken thighs they are so much juicier and almost foolproof! It’s a bit more work but it’s worth it.
Put the marinated chicken into your oven with some oil and crushed garlic, check from time to time.
Once cooked, take the flesh from the bone and add to a Big plate of Nachos together with, chopped spring onions, red & yellow bell pepper, black olives and grated Cheddar.
Put into the oven until the cheese had melted, finish off with some Cilantro/Coriander and the dips.
No dished afterwards , just be sure you have A LOT of napkins at the ready!!
