Chopped Cucumber with Dill & Raspberry vinegar

Another easy side, you can make almost any herb vinegar just keep in mind Jamie Oliver’s golden rule… 1/3 of acid (lemon, raspberry vinegar) and 2/3 of oil. In this case I added dill, olive oil, raspberry vinegar, salt & pepper.

Cut the cucumber in cubes (without the seeds) , toast some sesame seeds on high heat, chop up some red chili, mix everything together and add some soy sprouts.
